Cinnamon Vanilla Waffles

Serves about 8-10 waffles

Tips

Feel free to leave out the cinnamon if you’re not a fan. In the fall, you can make these pumpkin-spice-y with some nutmeg and clove. Super tasty!

Ingredients

  • 2 large eggs

  • 1 ¼ tsp vanilla extract

  • 2 c milk alternative

  • ½ c vegetable oil

  • 3 tsp sugar

  • 1 Tbsp baking powder

  • ⅛ tsp salt

  • 2 c flour

  • 3 tsp cinnamon

  • Agave or maple syrup and fresh fruit for topping

 

Preparation

  1. In a large bowl, whisk eggs until foamy. Add vanilla, milk and vegetable oil. Whisk well.

  2. Add sugar, baking powder and salt to the wet mixture. Whisk again.

  3. Add flour and cinnamon, and mix until just combined.

  4. Pour into preheated waffle iron and follow waffle iron’s cook time instructions.
