Tips

For some added spice, I like mixing in a handful of kimchi or adding 1-2 tsp of Sriracha.

Ingredients

  • 3 large potatoes

  • ½ c flour

  • 2 green onions, chopped

  • 3 Tbsp olive oil, divided

  • 2 tsp paprika (smoked is great if you’ve got it)

  • ½ tsp black pepper

  • ½ tsp salt

 

Preparation

  1. Peel and shred potatoes. Place shredded potatoes in a bowl and cover with cold water. Let sit for 1-2 minutes. Pour out the water, add new cold water to cover, and let sit for another 1-2 minutes. Repeat once more. After third soak, rinse and drain well.

  2. Squeeze out as much water as you can. Add flour, green onions, 1 Tbsp olive oil, paprika, pepper and salt. Mix well.

  3. Roll into palm-sized balls and form into a patty shape.

  4. Heat remaining 2 Tbsp olive oil in a non-stick skillet and add patties when the oil is hot.

  5. Fry 3-5 minutes until golden and crispy then flip to the other side for another 3-5 minutes.
