Tofu, Tomato & Seaweed

Stir-Fry

Tips

If using dried seaweed, remember that a little goes a long way. 

Ingredients

  • 2 Tbsp vegetable or canola oil

  • 4 lrg. tomatoes, diced (preferably fresh)

  • 12 oz package regular tofu, cut into large cubes

  • Salt, to taste

  • 1Tbsp soy sauce, or to taste (liquid aminos works too)

  • Chili sauce, to taste (optional)

  • ½ c seaweed

  • Cooked rice or noodles, for serving

 

Preparation

  1. Heat oil in a wok or skillet. Add tomatoes and cook for several minutes until very soft.

  2. Add tofu, salt, soy sauce and chili sauce. Cook for several more minutes until tofu is heated completely through.

  3. Stir in seaweed. Cook until all ingredients are heated through. If using dried seaweed, cook until fully rehydrated.

  4. Serve immediately over rice or noodles.
