Rice-Cooker Mac & Cheese

Tips

If you like your mac n cheese extra gooey, I suggest 1 ¾ c cheese and mixing in some shredded, dairy-free mozzarella as well. 

Ingredients

  • 2 c pasta, my family prefers alphabet, but elbow macaroni works just fine too

  • 2 c vegetable broth

  • 1 c lactose-free milk, can substitute with original, unsweetened almond milk

  • 1 ½ c dairy-free cheddar cheese, shredded

 

Preparation

  1. Put pasta and broth in your rice cooker. Cook until the liquid is absorbed - my rice cooker takes about 12 minutes.

  2. Stir in the milk and your cheese.

  3. Cook until your rice cooker switches to warm. About 10 minutes.

  4. Serve up and enjoy!
